Za'atar Honey Butter Rolls: A Piece of Cake #57

apieceofcake.substack.com

We are living in the age of the pop-up in New York. There are so many great businesses in the city making a name for themselves without a permanent brick and mortar. We’ve got our friends over at Dacha 46, the long-term Ha's Dac Biet pop-up on Forsyth Street, and the rotating cast of characters at Winner’s Friends & Family Meal; just to name a few. I myself have been fortunate enough to pop up here and there over the last couple of years. And I’m doing it again.

Like I said in last week’s Quick Bites, Edouard Massih and I are hosting a Valentine’s Day pop-up dinner at his wonderful Greenpoint spot, Edy’s Grocer. We’re calling it “Edy’s Chophouse,” because we realized how easily we could bring the Lebanese flavors Edy’s Grocer serves every day into traditional New York steakhouse dishes. The menu is as beautiful as it is fun, which is generally how I like to operate.

As this recipe hits your inbox I believe there are a very small number of to-go dinners still available to pre-order for February 14th. In-person seating is sold out. But don’t fret: no matter what your Valentine’s plans are, and no matter where you live, you can make the dinner rolls we’ll be serving at Edy’s Chophouse.

These rolls came about after Andrew kept whispering something about honey butter in my ear on and off over the last few months. “Honey butter” this, “honey butter” that. He kept telling me about the big yeasty dinner rolls, served with honey butter, he’d eat as a kid at after-church lunch. So here you go babe, just in time for Valentine’s. The base of this recipe is an adaptation of Claire Saffitz’s extremely popular sour cream and chive rolls from her book Dessert Person. It’s a pretty flawless recipe as is, and I’ve made it more than once. Adding in a generous helping of za’atar and lacquering them with salted honey butter, you get a damn good roll. Perfectly suited for Edy’s Chophouse, or your house.
